Fruit Crepes

Serves: 8

Items Needed:

Blender, crepe pan or non-stick skillet, spatula, measuring cups, measuring spoons

Ingredients

  • 1 cup almond flour
  • 4 large eggs
  • ½ cup almond milk (unsweetened)
  • 1 tbsp melted butter or coconut oil
  • ½ tsp vanilla extract 
  • Pinch of salt

For the Filling

  • 3 cups mixed berries (fresh or frozen strawberries, blueberries, raspberries)
  • Whipped Cream (unsweetened)

Directions

  1. In a blender, combine almond flour, eggs, almond milk, melted butter or coconut oil, vanilla extract. and a pinch of salt. Blend until smooth and let the batter sit for a few minutes to thicken slightly.
  2. Heat a non-stick skillet or crepe pan over medium heat. Pour a small amount of batter into the center of the pan, swirling it around to spread it thinly.
  3. Cook for 1-2 minutes on each side or until the edges start to brown. Repeat with the remaining batter. 
  4. Wash and slice the berries. Place about 1/3 cup of the berries down the middle of each crepe. 
  5. Fold the sides of the crepe over the filling like a letter.
  6. Top the crepes with a dollop of unsweetened whipped cream and garnish with a berry slice.

Alternative sweet fillings: fresh fruit, berries, vanilla yogurt, Nutella, whipped ricotta, cream cheese

Alternative Savory fillings: chicken, shrimp, ham, spinach, mushrooms, artichokes, onions, scrambled eggs, cheeses
