Fruit Crepes

Items Needed:
Blender, crepe pan or non-stick skillet, spatula, measuring cups, measuring spoons
Ingredients
- 1 cup almond flour
- 4 large eggs
- ½ cup almond milk (unsweetened)
- 1 tbsp melted butter or coconut oil
- ½ tsp vanilla extract
- Pinch of salt
For the Filling
- 3 cups mixed berries (fresh or frozen strawberries, blueberries, raspberries)
- Whipped Cream (unsweetened)
Directions
- In a blender, combine almond flour, eggs, almond milk, melted butter or coconut oil, vanilla extract. and a pinch of salt. Blend until smooth and let the batter sit for a few minutes to thicken slightly.
- Heat a non-stick skillet or crepe pan over medium heat. Pour a small amount of batter into the center of the pan, swirling it around to spread it thinly.
- Cook for 1-2 minutes on each side or until the edges start to brown. Repeat with the remaining batter.
- Wash and slice the berries. Place about 1/3 cup of the berries down the middle of each crepe.
- Fold the sides of the crepe over the filling like a letter.
- Top the crepes with a dollop of unsweetened whipped cream and garnish with a berry slice.
