Lemon Herb Grilled Skewers with Quinoa Tabbouleh

Bowl, grill or grill pan, skewers, large bowl

Ingredients

Skewers

  • 1 pound chicken breast, cut into 1-inch cubes OR 1 lb firm tofu, cut into 1-inch cubes

Marinade

  • 3 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Quinoa Tabbouleh

  • 1 cup quinoa, cooked and cooled
  • 1 cup parsley, finely chopped
  • 1/2 cup mint leaves, finely chopped
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely diced
  • 1/2 cucumber, diced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Directions

  1. In a bowl, whisk together the marinade ingredients. Add the chicken or tofu to the marinade and toss to coat. Let it marinated for at least 30 minutes in the fridge. 
  2. Preheat a grill or grill pan to medium-high heat.
  3. Thread the marinated chicken or tofu onto skewers.
  4. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature of 165F) or the tofu has nice grill marks and is heated through. 
  5. In a large bowl, combine the cooked quinoa, parsley, mint, tomatoes, red onion, and cucumber.
  6. Drizzle with lemon juice and olive oil. Toss well to combine.
  7. Season with salt and pepper to taste. 
  8. Adjust lemon juice or olive oil as needed.
  9. Plate the skewers alongside a generous serving of quinoa tabbouleh.
