Lemon Herb Grilled Skewers with Quinoa Tabbouleh

Bowl, grill or grill pan, skewers, large bowl
Ingredients
Skewers
- 1 pound chicken breast, cut into 1-inch cubes OR 1 lb firm tofu, cut into 1-inch cubes
Marinade
- 3 tablespoons olive oil
- Juice and zest of 1 lemon
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Quinoa Tabbouleh
- 1 cup quinoa, cooked and cooled
- 1 cup parsley, finely chopped
- 1/2 cup mint leaves, finely chopped
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely diced
- 1/2 cucumber, diced
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper, to taste
Directions
- In a bowl, whisk together the marinade ingredients. Add the chicken or tofu to the marinade and toss to coat. Let it marinated for at least 30 minutes in the fridge.
- Preheat a grill or grill pan to medium-high heat.
- Thread the marinated chicken or tofu onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature of 165F) or the tofu has nice grill marks and is heated through.
- In a large bowl, combine the cooked quinoa, parsley, mint, tomatoes, red onion, and cucumber.
- Drizzle with lemon juice and olive oil. Toss well to combine.
- Season with salt and pepper to taste.
- Adjust lemon juice or olive oil as needed.
- Plate the skewers alongside a generous serving of quinoa tabbouleh.
