Apple Cider Glazed Chicken

medium-sized bowl, medium sauté pan, meat thermometer
Ingredients

2 cloves garlic, smashed

1 ¼ cups apple cider (1 cup for marinade, ¼ cup for cooking)

2 tbsp olive oil

2 tsp dried thyme or 2 tbsp fresh thyme leaves

½ tsp apple cider vinegar

2 tsp dijon mustard

½ tsp salt
-
1 tsp brown sugar
-
½ tsp black ground pepper

8 chicken tenders

Make the marinade for the chicken by adding garlic, 1 cup cider, thyme, cider vinegar, mustard salt, pepper, and brown sugar to a medium-sized bowl. Mix well to combine. Add chicken to marinade. Marinate for at least 10 minutes or up to 24 hours.

Heat a medium sauté pan and add the olive oil. Drain the chicken well, then add to the oil. Cook on both sides until brown, and the internal temperature reaches 165F. Add the rest of the cider and let simmer for 2-3 minutes, until it thickens.
