Kale Berry Salad

Serves: 4

Items Needed:

Mixing bowl, whisk, knife, cutting board

Ingredients

  • 8 cups of shredded kale
  • ½ cup fresh or frozen berries
  • 3 tbsp. goat cheese
  • 1½ cup cooked quinoa or grain of your choice
  • 5 tbsp toasted walnuts
  • 2 tbsp. balsamic vinegar
  • ¼ cup olive oil
  • 1 garlic clove
  • 1 tsp mustard
  • 1 tsp honey
  • Salt and pepper to taste

 

Directions

  1. Toast walnuts over medium high heat until lightly toasted and fragrant.
  2. In a mixing bowl, combine vinegar, garlic, honey, and mustard. Whisk together and stream in the oil until combined. Taste and season accordingly. 
  3. Add the kale into the dressing and work the dressing into the greens. Add the quinoa, berries, walnuts, and goat cheese. Toss until well combined and plate up to enjoy.
