Spicy Shrimp Citrus Salad

Serves: 6

Items Needed:

Blender, sauté pan or grill pan, cutting board, knife, measuring cups and spoons, serving platter

Ingredients

  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 garlic clove, chopped
  • 3 tablespoons cilantro leaves, chopped
  • Salt and pepper, to season
  • 1 orange, peeled and cut into sections
  • 1 grapefruit, peeled and cut into sections
  • 1/2 teaspoon red cayenne pepper
  • 2 pounds shrimp, peeled and deveined
  • 5 ounces salad mix

Directions

  1. For the vinaigrette: combine lime juice, olive oil, garlic, cilantro, and cayenne pepper in a blender for about 1 minute. Refrigerate until ready to use.
  2. Heat a saute pan or grill pan over medium to high heat. 
  3. Season the shrimp with salt and pepper and spray with nonstick cooking spray.
  4. Grill or saute for about 3 minutes on each side.
  5. Layer the salad mix, oranges, and grapefruit sections on a large platter. Arrange grilled shrimp on top and add vinaigrette as desired.
