Spicy Shrimp Citrus Salad

Items Needed:
Blender, sauté pan or grill pan, cutting board, knife, measuring cups and spoons, serving platter
Ingredients
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 garlic clove, chopped
- 3 tablespoons cilantro leaves, chopped
- Salt and pepper, to season
- 1 orange, peeled and cut into sections
- 1 grapefruit, peeled and cut into sections
- 1/2 teaspoon red cayenne pepper
- 2 pounds shrimp, peeled and deveined
- 5 ounces salad mix
Directions
- For the vinaigrette: combine lime juice, olive oil, garlic, cilantro, and cayenne pepper in a blender for about 1 minute. Refrigerate until ready to use.
- Heat a saute pan or grill pan over medium to high heat.
- Season the shrimp with salt and pepper and spray with nonstick cooking spray.
- Grill or saute for about 3 minutes on each side.
- Layer the salad mix, oranges, and grapefruit sections on a large platter. Arrange grilled shrimp on top and add vinaigrette as desired.
