Spicy Spring Vegetable Egg Bake with Ham

Serves: 6

Ingredients

  • 1 large red onion, diced
  • 1 large red bell pepper, seeds removed and diced
  • 1  ½ cups mushrooms, sliced
  • 1 medium-sized zucchini, sliced into thin coins
  • 1 small bunch of asparagus, tips and about an inch of the stalks, chopped
  • ½ medium jalapeno, rough chopped (remove seeds for less heat)
  • ½ cup ham, diced
  • A pinch of salt and pepper
  • 1 tbsp olive oil
  • 8 large eggs
  • 3 tbsps fresh parsley, roughly chopped

Directions

  1. Preheat the oven to 400°F. 
  2. In a baking dish, combine all the vegetables and chunks of ham. Add a pinch of salt, black pepper, and drizzle of olive oil. Toss to mix and roast in the oven for 20 minutes or until the veggies are tender. 
  3. In a separate bowl, beat the eggs and mix in the parsley. 
  4. Pour the egg mixture over the veggies in the baking dish. Return it to the oven and bake for another 10 minutes or until the eggs are fully set.
  5. Let it cool slightly before serving.
