Spicy Spring Vegetable Egg Bake with Ham

Ingredients
- 1 large red onion, diced
- 1 large red bell pepper, seeds removed and diced
- 1 ½ cups mushrooms, sliced
- 1 medium-sized zucchini, sliced into thin coins
- 1 small bunch of asparagus, tips and about an inch of the stalks, chopped
- ½ medium jalapeno, rough chopped (remove seeds for less heat)
- ½ cup ham, diced
- A pinch of salt and pepper
- 1 tbsp olive oil
- 8 large eggs
- 3 tbsps fresh parsley, roughly chopped
Directions
- Preheat the oven to 400°F.
- In a baking dish, combine all the vegetables and chunks of ham. Add a pinch of salt, black pepper, and drizzle of olive oil. Toss to mix and roast in the oven for 20 minutes or until the veggies are tender.
- In a separate bowl, beat the eggs and mix in the parsley.
- Pour the egg mixture over the veggies in the baking dish. Return it to the oven and bake for another 10 minutes or until the eggs are fully set.
- Let it cool slightly before serving.
