Avocado Egg Salad

Items Needed:
Mixing bowl, spatula, or spoon
Ingredients
- 4 hard boiled eggs, peeled and chopped
- 1 ripe avocado
- 1 stalk of celery, finely chopped
- 1/2 red onion, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon dill, dried
- 1 teaspoon garlic powder
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- Optional: 1 tablespoon Greek yogurt or mayonnaise
Directions
- In a medium bowl, mash the avocado.
- Then mix in the dill, garlic powder, mustard, and mayo/ Greek yogurt if you choose to use it.
- Add in the eggs, celery, onion and mix everything well together.
- Season with salt and pepper.
- Serve on a sandwich, wrap, or on top of lettuce.
