Garden-Fresh Veggie Burgers

Serves: 4 Burgers

Items Needed:

Large bowl, colander, wooden spoon, large skillet or grill pan, spatula

Ingredients

  • 1 can or 14oz cooked beans of choice, drained and rinsed
  • 1/2 cup panko breadcrumbs
  • 1 cup chopped vegetables of choice
  • 1 egg
  • 1 tablespoon seasoning of choice
  • 1 garlic clove, minced
  • 1 cup extras of choice
  • To serve: lettuce greens, tomato, onion, cheese, buns, pickles, sauce, etc.

Directions

  1. In a large bowl, add the drained and rinsed beans. Using your hands or a wooden spoon, mash the beans until most of them are fully mashed. You can leave a few whole beans to add texture. 
  2. To the bowl, add breadcrumbs, vegetables, egg, seasoning, garlic, and extras of choice. Using your hands or a wooden spoon, mix the ingredients until well combined.
  3. Form the bean mixture into 4 burger patties. 
  4. Heat a large skillet or grill pan over medium-high heat. Spray with cooking spray or add a tablespoon of oil. Gently place the veggie burger patties into the skillet. Cook on each side for 4-6 minutes until heated through, firm, and browned. Enjoy on a bun with your favorite toppings, in a wrap, or on a salad!

 

Options and Variations

Beans: chickpeas, lentils, peas, kidney beans, black beans, edamame, pinto beans, navy beans

Vegetables: mushrooms, carrots, broccoli, onion / shallot / green onion, spinach, eggplant, peppers, potatoes / sweet potatoes, beets, tomatoes, Brussels sprouts, cauliflower, corn, kale, zucchini

Seasonings: paprika, cumin, chili powder, garlic powder, onion powder, taco seasoning, thyme, oregano, Italian seasoning, salt and pepper, chipotle powder, BBQ seasoning, turmeric, ginger, garam masala, parsley, tomato paste, tamari / soy sauce, balsamic vinegar, sriracha, Worcestershire sauce, Parmesan cheese, miso paste

Extras: walnuts, cashews, barley, brown rice, oats, bulgur wheat, ground flaxseed, pine nuts

Veggie Burger Sauces

Cilantro Lime Crema

Ingredients

  • 1 cup sour cream (or Greek yogurt)
  • 1/4 cup cilantro
  • 1/4 cup lime juice

Directions

  1. Combine all ingredients in the bowl of a food processor. Pulse until well combined. Add more or less lime juice depending on desired thickness. 

Lemon Garlic Aioli

Ingredients

  • 1 cup light mayonnaise
  • 2 cloves garlic
  • 2 tablespoons lemon juice

Directions

  1. Combine all ingredients in the bowl of a food processor. Pulse until well combined. Add more or less lemon juice depending on desired thickness and taste. 

 

Mango Ketchup

Ingredients

  • 1 6-oz can tomato paste
  • 1/2 cup apple cider vinegar
  • 1/2 cup water, or more as needed
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 cup mango, diced (frozen is fine)
  • Honey, to taste

Directions

  1. Heat a skillet over medium heat. Add all ingredients. Bring to a simmer, cover, reduce heat to low, and cook for 15-20 minutes, until the mixture starts to reduce. Add more water if the mixture starts to get too thick. 
  2. remove from the heat and let cool for 5-10 minutes. Transfer mixture to a blender or food processor. Carefully pulse until smooth. For a more "ketchup-y" consistency, you can strain the mixture using a fine mesh strainer. Chill and store in a covered container.
