Grilled Peach Salad

Small container with a lid, outdoor grill or grill pan, large serving bowl, cutting board, knife
Ingredients
- 1/4 cup apple cider vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 1/2 teaspoon freshly grated ginger
- 1/2 teaspoon garlic paste
- 1 tablespoon vegetable oil
- 2 peaches, each cut into 8 wedges
- 1/2 pound kale leaves, veins removed
- 1 medium red bell pepper, chopped
- 1/4 red onion, thinly sliced
- 1/4 cup pumpkin seeds
- 1/3 cup feta cheese
- Salt and pepper, to taste
Directions
- In a small container with a lid, combine the apple cider vinegar, 2 tablespoons vegetable oil, honey, grated ginger, and garlic paste. Cover tightly and shake well to combine. Refrigerate until ready to use.
- Preheat an outdoor grill or grill pan over medium-high heat. Lightly oil the grates with the remaining 1 tablespoon of vegetable oil. Place the peach wedges on the grill and cook for about 3 minutes per side, or until grill marks appear and the peaches are slightly softened.
- Place the kale in a large serving bowl. Drizzle with the prepared dressing and toss to coat evenly. Top with the grilled peaches, chopped red bell pepper, sliced red onion, pumpkin seeds, and crumbled feta cheese.
