Gingered Pear and Parsnip Saute

Items Needed:

Medium saute pan

Ingredients

  • 2 pears, peeled, seeded, and quartered
  • 3 medium to large parsnips, peeled and sliced in an angled coin shape
  • 1/2 cup cooking wine
  • 1/2 cup vegetable broth
  • 1 tablespoon butter
  • 1 1/2 tablespoons fresh lemon juice
  • 2 fresh ginger slices, about an inch long
  • 1/2 teaspoon honey
  • Pinch crushed red pepper
  • 1-2 tablespoons olive oil

Directions

  1. In a medium to large saute pan, add all the ingredients and bring to a simmer. 
  2. Let all the liquids simmer down to just a concentrated broth. 
  3. Add the olive oil and saute to caramelize the pears and parsnips slightly.
