Gingered Pear and Parsnip Saute

Medium saute pan
Ingredients
- 2 pears, peeled, seeded, and quartered
- 3 medium to large parsnips, peeled and sliced in an angled coin shape
- 1/2 cup cooking wine
- 1/2 cup vegetable broth
- 1 tablespoon butter
- 1 1/2 tablespoons fresh lemon juice
- 2 fresh ginger slices, about an inch long
- 1/2 teaspoon honey
- Pinch crushed red pepper
- 1-2 tablespoons olive oil
Directions
- In a medium to large saute pan, add all the ingredients and bring to a simmer.
- Let all the liquids simmer down to just a concentrated broth.
- Add the olive oil and saute to caramelize the pears and parsnips slightly.
