Lentil & Mushroom Lettuce Wraps with Miso-Ginger Sauce

Ingredients
- 1 tablespoon olive oil
- 1 cup chopped mushrooms
- 1 clove garlic, minced
- 1 cup cooked lentils (brown or green)
- 1 small carrot, shredded
- 1 tablespoon soy sauce
- 1 head butter lettuce
- 1 teaspoon white miso paste
- 1 teaspoon grated ginger
- 1 teaspoon maple syrup or honey
- 1 tablespoon rice vinegar
- 1 tablespoon warm water
Directions
- In a skillet, heat oil and saute mushrooms and garlic for 3-4 minutes. Add lentils, carrots, and soy sauce. Stir and cook 2-3 more minutes.
- In a small bowl, whisk together the miso, ginger, maple syrup, vinegar, and water until smooth.
- Spoon the lentil-mushroom mixture into the lettuce cups and drizzle with the sauce. Serve immediately.
