Lentil & Mushroom Lettuce Wraps with Miso-Ginger Sauce

Skillet, small bowl

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped mushrooms
  • 1 clove garlic, minced
  • 1 cup cooked lentils (brown or green)
  • 1 small carrot, shredded
  • 1 tablespoon soy sauce
  • 1 head butter lettuce
  • 1 teaspoon white miso paste
  • 1 teaspoon grated ginger
  • 1 teaspoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon warm water

Directions

  1. In a skillet, heat oil and saute mushrooms and garlic for 3-4 minutes. Add lentils, carrots, and soy sauce. Stir and cook 2-3 more minutes. 
  2. In a small bowl, whisk together the miso, ginger, maple syrup, vinegar, and water until smooth. 
  3. Spoon the lentil-mushroom mixture into the lettuce cups and drizzle with the sauce. Serve immediately.
