Greek Chicken Burgers

Serves: 4

Items Needed:

Large bowl, cutting board, knife, measuring cups and spoons, large skillet or griddle

Ingredients

  • 1 pound lean ground chicken
  • 1 egg, lightly beaten
  • 2 tablespoons olive oil
  • 3 tablespoons red onion, chopped
  • 1/2 + 1/4 cup feta cheese, crumbled
  • 1 1/2 teaspoons oregano
  • 5 ounces fresh spinach
  • 3 cloves garlic, minced
  • 1 medium cucumber, sliced
  • 1 red onion, sliced into rings
  • Tzatziki sauce, for serving

Directions

  1. In a large bowl, add the ground chicken, egg, one tablespoon olive oil, chopped red onion, 1/2 cup feta cheese, and oregano. Mix thoroughly.
  2. Divide the burger mixture into 4 portions and mold into patties. 
  3. Prepare the spinach topping by adding one tablespoon of olive oil in a pan over medium heat. Add the spinach and garlic and cook until wilted, approximately 3 minutes. Remove the pan from the heat. 
  4. Slice the cucumber and red onion into rounds and set aside. 
  5. Heat a sauté skillet or griddle to medium heat. Spray the burgers with your favorite cooking spray. Griddle on each side for 4-5 minutes or until the internal temperature reaches 165F and there is no visible pink in the burger. 
  6. Serve on top of a bed of lettuce, topped with the wilted spinach, cucumber, red onion, and tzatziki sauce. 

Meal Prep Tips

  • Prepare the chicken burger mixture ahead of time. Roll into balls and store in a Tupperware for up to 3 days. Cook to order.
  • OR prepare the chicken burger mixture ahead of time and cook the patties. Store the cooked patties in a Tupperware for up to 3 days. Reheat in a microwave or skillet.
