Cinnamon Apple Crepes
Yield: 4 Crepes
Items Needed:
Blender, measuring cup, small saucepan, nonstick skillet, platter
Ingredients
- 3/4 cup water
- 3/4 cup milk
- 1 1/2 cups all-purpose flour
- 3 teaspoons granulated sugar
- 1 1/2 teaspoons pure vanilla extract
- 3/4 teaspoon ground cinnamon
- 3 large eggs, room temperature
- 3 tablespoons butter, melted
- 2 medium apples, cored and sliced
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- Pinch of nutmeg
- 1 tablespoon lemon juice
Directions
- Combine the water, milk, flour, sugar, vanilla extract, and cinnamon in a blender. Blend to combine. Add the eggs and blend well until smooth. Pour the batter into a large measuring cup, cover with plastic wrap, and chill the batter for at least an hour or overnight.
- When ready to serve, combine the apples, sugar, cinnamon, nutmeg, and lemon juice in a small saucepan set over medium-low heat. Cook until the apples soften, about 3-5 minutes.
- Using a nonstick skillet or crepe skillet set over medium heat, lightly coat the skillet with melted butter. When warm, pour about 1/4 cup of the batter onto the skillet and evenly spread. Cook each side until done, about 1-2 minutes. Transfer to a plate and repeat until all the batter is gone.
- To serve, arrange crepes on a platter. Serve with apple topping.
