Ingredients
3/4 cup water
3/4 cup milk
1 1/2 cups all-purpose flour
3 teaspoons granulated sugar
1 1/2 teaspoons pure vanilla extract
3/4 teaspoon ground cinnamon
3 large eggs, room temperature
3 tablespoons butter, melted
2 medium apples, cored and sliced
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Pinch of nutmeg
1 tablespoon lemon juice
Directions
Combine the water, milk, flour, sugar, vanilla extract, and cinnamon in a blender. Blend to combine. Add the eggs and blend well until smooth. Pour the batter into a large measuring cup, cover with plastic wrap, and chill the batter for at least an hour or overnight.
When ready to serve, combine the apples, sugar, cinnamon, nutmeg, and lemon juice in a small saucepan set over medium-low heat. Cook until the apples soften, about 3-5 minutes.
Using a nonstick skillet or crepe skillet set over medium heat, lightly coat the skillet with melted butter. When warm, pour about 1/4 cup of the batter onto the skillet and evenly spread. Cook each side until done, about 1-2 minutes. Transfer to a plate and repeat until all the batter is gone.
To serve, arrange crepes on a platter. Serve with apple topping.
