Baked Parmesan Carrot Fries

Oven preheated to 400F, baking tray, parchment paper, cutting board, knife, shallow dish, spoon, plate
Ingredients
- 3 large carrots
- 2 eggs
- 4 tablespoons water
- 1/3 cup grated Parmesan cheese
- Pinch of Kosher salt and pepper
Directions
- Preheat the oven to 400 and line a baking tray with parchment paper.
- Slice the carrots into long, thin pieces, approximately the size of French fries. Leave the skin on for added nutrition.
- In a shallow dish, mix the egg and water, then place it in a shallow dish. In another shallow dish, place the Parmesan.
- Dip the carrot sticks first in the egg wash, allowing any excess to drip off, then roll them in the Parmesan and place on the prepared baking tray. Repeat until all carrots are coated. Sprinkle the carrot fries with salt and pepper, then place them in the oven for 15-20 minutes, turning once, until they achieve a dark golden-brown color.
- Remove the carrot fries from the oven, transfer to a plate, and sprinkle with parsley.
