Cheeseburger Casserole

Items Needed:

Large skillet, paper towels, cutting board and knife

Ingredients

  • 2 slices bacon
  • 2 teaspoons olive oil
  • 5 cups (about 2 pounds) frozen cauliflower rice, thawed
  • 1 medium onion, diced
  • 1 pound ground beef 90% lean
  • 1 tablespoon garlic, minced
  • 1 tablespoon flour
  • 1/4 cup no sugar/no salt added ketchup
  • 3 tablespoons dill relish
  • 2 teaspoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth, low sodium
  • Pinch of red pepper flakes
  • 3/4 cup reduced fat shredded cheddar cheese
  • Dill pickle slices
  • Kosher salt and pepper, to taste

Directions

  1. In a large skillet, cook bacon until crisp. Drain on paper towels and set aside. Wipe out the extra grease in the pan with a paper towel.
  2. Add two teaspoons olive oil. Then, add cauliflower to the skillet and season with a pinch of salt, pepper, smoked paprika, and red pepper flakes, if using. Cook the cauliflower until softened and you can see yummy golden caramelized bits. Remove from the skillet and set aside. Return the skillet to the burner. 
  3. Add the ground beef and onion. Season with black pepper. Cook until the ground beef is browned and the onions are softened. Add garlic and cook for about 30 more seconds.
  4. Sprinkle beef with one tablespoon of flour and stir it around to coat. Cook for about 30 seconds. 
  5. Add ketchup, relish, mustard, and broth. Stir together to combine everything. Bring to a gentle boil then reduce heat to simmer for a few minutes. 
  6. Add cauliflower back to the skillet and cover it with the cheese. 
  7. Top with pickles and crispy crumbled bacon.
