Chicken Lettuce Wraps with Mango Salsa

Items Needed:

Medium bowl, cutting board, knife, nonstick skillet

Ingredients

Mango Salsa

  • 1 1/2 cups diced mango
  • 1 red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1 jalapeno, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Zest and juice of 1 lime
  • Salt and pepper, to taste

Chicken Lettuce Wraps

  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 2 cloves garlic, minced
  • 1 pound chicken breasts, thinly sliced
  • 1 large red bell pepper, diced
  • 4 green onions, thinly sliced
  • 8 large lettuce leaves

Directions

  1. Place all salsa ingredients in a medium bowl. Stir well and adjust seasoning to taste. Refrigerate until ready to use. 
  2. In a bowl, mix the olive oil, cumin, garlic, and chicken.
  3. Heat a nonstick skillet over medium-high heat.
  4. Add the chicken and cook over medium-high heat.
  5. Add the chicken and cook for 5 minutes.
  6. Add the bell pepper and cook for 3 more minutes.
  7. Stir in the green onions and remove from heat.
  8. Spoon the mixture into the lettuce leaves.
  9. Top with the mango salsa and serve immediately.
