Herb Turkey Meatloaves

Serves: 24 Mini Meatloaves
Items Needed:
Oven, muffin tin, large bowl
Ingredients
- 1 pound lean ground turkey
- 1/2 cup rolled oats
- 1 egg
- 1 to 1 1/2 cups chopped vegetables of choice
- 1/4 cup finely chopped onion
- 2 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped chives
- 1 teaspoon chopped fresh thyme
- 2 tablespoons tomato paste
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Directions
- Preheat oven to 375F. Lightly grease a muffin tin with olive oil spray.
- Mix all ingredients together in a large bowl until just combined.
- Divide into 24 mini muffin cups.
- Bake for 20-25 minutes, or until the internal temperature reaches 165F.
- Top with extra fresh herbs before serving.
