Herb Turkey Meatloaves

Serves: 24 Mini Meatloaves

Items Needed:

Oven, muffin tin, large bowl

Ingredients

  • 1 pound lean ground turkey
  • 1/2 cup rolled oats
  • 1 egg
  • 1 to 1 1/2 cups chopped vegetables of choice
  • 1/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped chives
  • 1 teaspoon chopped fresh thyme
  • 2 tablespoons tomato paste
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
 

Directions

  1. Preheat oven to 375F. Lightly grease a muffin tin with olive oil spray.
  2. Mix all ingredients together in a large bowl until just combined.
  3. Divide into 24 mini muffin cups.
  4. Bake for 20-25 minutes, or until the internal temperature reaches 165F. 
  5. Top with extra fresh herbs before serving.
