Mediterranean Farro Salad

Serves: 6 Servings

Items Needed:

Large pot, large mixing bowl, colander, cutting board, knife, small bowl

Ingredients

  • 8 ounces farro, dry
  • 1 cup baby spinach leaves, gently chopped
  • 1 red bell pepper, chopped
  • 1 cup cucumber, diced
  • 3/4 cup red onion, diced
  • 4 ounce can sliced black olives
  • 3 ounces feta cheese
  • 1/2 cup olive oil
  • 1/2 lemon, juiced
  • 1 teaspoon fresh oregano
  • 1 teaspoon fresh basil
  • 1 teaspoon fresh parsley
  • 1 teaspoon fresh dill
  • Salt and pepper, to taste
 

Directions

  1. Bring a pot of water to a boil, season with salt, and cook the farro for 15-20 minutes. Drain, rinse, and set aside to cool. 
  2. Transfer the cooled farro to a large mixing bowl. Add the spinach, chopped vegetables, and olives, then crumble half of the feta cheese over the mixture. 
  3. In a small bowl, whisk the olive oil, lemon juice, fresh herbs, and salt and pepper until mixed. Pour the vinaigrette over the mixture, and gently fold until coated. Taste for seasoning and top with the remaining feta cheese.
