Shaved Zucchini and Bean Salad

Items Needed:
Large bowl, mandolin, spiralizer or vegetable peeler, small bowl, cutting board and knife
Ingredients
- 1 zucchini, shaved or spiralized
- 1/4 cup olives, pitted and halved
- 1/4 red onion, diced
- 1 cucumber, diced
- 1 cup cherry or grape tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1 can (15 oz) beans of choice, drained and rinsed
- 1 bunch fresh basil leaves, sliced
- 1 lemon, juiced
- 3 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1 teaspoon minced garlic
Directions
- In a large bowl, combine the zucchini, olives, red onion, cucumber, tomatoes, feta cheese, and beans.
- In a small bowl, whisk together the lemon juice, olive oil, oregano, and garlic to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle with fresh basil and mix again before serving.
