Shaved Zucchini and Bean Salad

Serves: 4 Servings

Items Needed:

Large bowl, mandolin, spiralizer or vegetable peeler, small bowl, cutting board and knife

Ingredients

  • 1 zucchini, shaved or spiralized
  • 1/4 cup olives, pitted and halved
  • 1/4 red onion, diced
  • 1 cucumber, diced
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1 can (15 oz) beans of choice, drained and rinsed
  • 1 bunch fresh basil leaves, sliced
  • 1 lemon, juiced
  • 3 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon minced garlic
 

Directions

  1. In a large bowl, combine the zucchini, olives, red onion, cucumber, tomatoes, feta cheese, and beans.
  2. In a small bowl, whisk together the lemon juice, olive oil, oregano, and garlic to make the dressing. 
  3. Pour the dressing over the salad and toss gently to combine. 
  4. Sprinkle with fresh basil and mix again before serving.
