1/4 cup extra-virgin olive oil, plus more for brushing
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 prepared recipe Thin Pizza Crust, at room temperature
1 cup cherry or grape tomatoes, halved
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Directions
Preheat grill to medium-high heat.
In a bowl, combine the shrimp, onion, olive oil, oregano, paprika, salt and pepper. Toss to coat.
Stretch the dough into a 10-11-inch circle. Lightly oil the grill grates. Grill dough for about 3 minutes until the top bubbles and the bottom is marked. Remove and place the grilled side up on a board. Brush with olive oil.
Grill the shrimp and onion until the shrimp is opaque and lightly charred and the onion is tender, about 5 minutes.
Top the grilled side of the dough with shrimp and onion. Add tomatoes and feta. Return to the grill, cover, and cook for another 5 minutes until the dough is cooked through and the cheese is soft.
Transfer to a cutting board,sprinkle with parsley, slice, and serve.
